"I'm covering a new restaurant that Michelin-starred chef Peter Rudolph is opening in Camas this May called Hey Jack. After years at Madera and a year of vanlife, Rudolph teamed with California transplant and wine and restaurant alum Don Riedthaler; the two are literally building the restaurant themselves—from handmade curly maple tables to renovation basics—and have been advertising for servers and kitchen staff on Craigslist. The menu will be a far cry from Rudolph's previous $130 tasting menus, instead focusing on Pacific Northwest ingredients like salmon and steelhead from Washington and Oregon fishermen, with an open-ended approach driven by the morning farmer's market: roughly five starters, a few entrees, and three or four desserts with the idea that customers will order “2.5 plates.” Riedthaler says the place will be not expensive or snooty, with tight tables and good food where everyone knows each other, and the team hopes to open by May 1." - Brooke Jackson-Glidden
