"Singh’s is known for its roti, but go and ask for “doubles” with extra sauce and you’ll be presented with two pieces of delicately fried dough topped with a pile of spicy curried chickpeas. The restaurant makes its own signature sauce (you can buy jars of it), which is a mild, sweet, and perfect complement to the chickpeas. —DH I’m co-signing this one, and I usually hate chickpeas, so to say that this was one of my favorite dishes of the year should tell you something.
