"A Colorado-based healthy fast-casual chain is opening a downtown location at the Frost Bank Tower (401 Congress Avenue) on Monday, January 15. The restaurant emphasizes allergy- and special diet-friendly fare, with a menu similar to other locations featuring salads, soups, sandwiches, bowls, and brick-oven pizzas, plus a breakfast lineup of waffles, sandwiches, plates, and scrambles. The chain is notable for being the first national restaurant to use pasture-raised eggs nationwide.
