"Opening soon in the Golden Triangle’s Broadway Market food hall, Tora Ramen will take over the stall formerly occupied by Biju’s Little Curry Shop and be led by chef Jesusio Silva, who currently serves as executive chef at the Misaki on Broadway sushi and oyster bar and previously helped open Osaka Sushi and start the Sushi-Rama chain. Silva plans to start with a simple ramen menu before experimenting with cross-cultural flavors—he recently made a lamb posole ramen that fused Mexican flavors of his youth with the Japanese techniques he’s developed over the past 15 years. In addition to ramen, the stall will offer Japanese appetizers including house-made gyoza, pork ribs, Japanese fried rice, and black mussels in a red curry sauce. The name "Tora" (Japanese for "tiger") nods both to Silva’s fandom of the Tigres soccer team and to the long-running Sushi Tora in Boulder, and the stall will be open daily from 11 a.m., closing at 10 p.m. on weeknights and midnight on weekends." - Paul Albani-Burgio
