"A new prime-rib–centric steakhouse opened at the Cannery in North Las Vegas, taking over the former Waverly’s Steakhouse space after a brief remodel. Prime rib is the focus, offered in four cuts ranging from 10 to 16 ounces and sourced as 40-day dry-aged Midwestern corn-fed beef; each prime-rib serving is accompanied by a choice of house salad or corn chowder and buttery mashed potatoes. The menu also features a wide range of alternatives—roast salmon, fried chicken, a prime-rib burger, roasted chicken, pan-seared scallops and shrimp, a pork porterhouse, sirloin steaks, filet mignon, bone-in rib-eye, and a New York strip—providing options for non–prime-rib diners. The restaurant operates Wednesday, Thursday, and Sunday from 5 to 9 p.m., and Friday and Saturday from 5 to 10 p.m.; the concept previously had a sibling location at the Eastside Cannery that closed in May 2017." - Susan Stapleton
