"Co-founded in 2011 with his mother Chong Suk Choi, Choi's Kimchi grew from jars made in their Gresham home and sold at farmers markets into a Portland staple: their kimchi topped bowls at Poke Mon, was stocked in countless grocery-store refrigerators, and was draped over tofu on sandwiches at Stacked. Their white napa kimchi won top honors at the Good Food Awards in 2016, the spicy napa kimchi now ships nationwide, and Matt and his mother often shared recipes with outlets like Sunset and OPB. Choi’s co-owner Matt Choi, remembered for a cheerful spirit, broad food-production knowledge, and generous mentorship in the artisan food community, was fatally stabbed in his Southeast Portland apartment in late October, a loss mourned across the city—Han Ly Hwang of Kim Jong Grillin called him “the reason Portland loves kimchi.”" - Alex Frane
