"Located at 223 South Wilmington Street, I learned that Young Hearts Distilling is a new downtown distillery opened by the Raleigh-based Trophy Brewing Company owners. As owner Chris Powers said, "We have always dreamed of owning a distillery and imagining the possibilities — and we decided now was our time." Powers partnered with David “Woody” Lockwood and David Meeker, brought on Les Stewart, and hired head distiller Mena Killough to make the project happen. Banking on a downtown resurgence, the team expects the space to draw crowds curious about the distilling process and eager to sample the gin, amari, and other spirits in fanciful, Instagrammable cocktails served from a rooftop patio. In addition to plenty of drinks, the distillery includes a full restaurant led by chef Alex Ricci and sous chef Josiah Halbohm offering ambitious dishes such as Brunswick rillettes, sweet potato pappardelle, beet bourguignon, and local pork torchon. Young Hearts is open Wednesdays through Sundays from 4:00 p.m. to 9:30 p.m., with plans to add brunch and lunch service in the future." - Erin Perkins
