"Serving as a love letter to chef German Castellanos’s 30-plus–year career in Italian kitchens, this new Summerlin spot from Castellanos and pastry chef Alessandro Stoppa debuted in the former Nittaya’s Secret Kitchen space and offers classic Italian dishes for lunch and dinner. Starters include a duck prosciutto salad with a sweet maui onion dressing and a burrata-topped golden beet carpaccio; Castellanos recommends mains such as spaghetti neri in lobster bisque, rabbit ragout pappardelle, octopus and cioppino, a bread-and-thyme–crusted New Zealand lamb chop, branzino in Prosseco sauce, and a risotto of the day. For lunch there’s a three-course $18 option with starters like a vanilla and pepper salad or polpo with grilled octopus (for $7 more), entrees including chicken Parmigiana, a prosciutto sandwich, or branzino (for $7 more), and desserts such as vanilla wanna cotta, tiramisu, or a berry bowl.
