"Two Detroit restaurant veterans are opening a colorful new bar in the former Stache International space in Eastern Market that aims to be a warm, year-round respite from dreary winters. The beverage program, led by a bartender with experience at Checker Bar and McShane’s, will emphasize bright flavors, fresh ingredients, and perfected classics like piña coladas, strawberry daiquiris, and jungle birds for “comfort drinking.” The kitchen, led by a chef who has managed restaurants in Portland, Chicago, New York, and Detroit and who previously worked with the co-owner, will serve eclectic, globally inspired street food — think smoked chicken legs, pierogi, dumplings, bao buns, and burgers — with vegan options for most items and a seasonally rotating menu. The design and color palette are inspired by a Cuban bird and aim to be bold and inviting; the team is preserving and repurposing elements of the prior bar (including cutting and capping the iconic golden poles and returning the carousel horses to the former owners) while adding a stage for live music and DJs and continuing to feature local art. The owners plan a mid-March opening to be ready for St. Patrick’s Day, initially open Thursday–Friday nights and all day/evening on weekends with brunch service focused on casual breakfast sandwiches and global dishes, and they intend to renovate and reveal improvements gradually over the following months." - Mickey Lyons
