"I’m looking forward to a new restaurant specializing in local cuisine that will open this spring in the newly minted Humaniti condo on Bleury Street; called h3, it’s led by chef Jean‑Sébastien Giguère (an alum of Toqué!, Au Pied de Cochon and former head of bistro Coureur des Bois and La Cabane du Coureur) and sommelier Hugo Duchesne (winner of the 2020 “Meilleur Sommelier du Québec”). The venture leans heavily on a “homegrown” ethos — talent, furnishings and ingredients sourced from Quebec — and Giguère says he’s focusing on things like “the hen house, our 4,000‑tap maple grove, or our Beloeil greenhouse” to develop self‑sufficiency. Early photos show dishes with a slight Japanese edge, including a vegetable and salmon roll flavored with koji, teriyaki ribs dusted with sesame, and Kamouraska lamb encrusted with nori and topped with garlic scapes." - Valerie Silva
