"Launching as a virtual kitchen in Montrose, this bento-focused concept is a collaboration between Naoki Yoshida (of Shun Japanese Kitchen) and Yosuke Motozawa (of Powered by Rice), reuniting two chefs who first worked together at Yoshida’s family restaurant Nippon over a decade ago. Inspired by ekiben — the station-bought bento boxes of Japan — the project uses a custom-designed, Osaka-made box embossed with gold-leaf lettering and emphasizes an authentic, story-driven approach to bento rather than flashy innovation. Diners build their own compartments from choices of rice (white, brown, or fried), a fried item (veggie tempura, chicken karaage, pork katsu, or takoyaki), a protein (teriyaki beef, grilled salmon, or Japanese hamburger), and salads such as kimchi, edamame, or spicy cucumber, creating more than 200 fresh-to-order combinations.
