"A spoonful of caviar dreams comes to Resorts World on December 3 when New York chef Shaun Hergatt opens his ode to all things caviar. Caviar Bar plans to open on the north end of the District, the 70,000-square-foot shopping esplanade that sits on Las Vegas Boulevard. In Las Vegas, Hergatt imagines a menu of seafood bites featuring organic salmon and fresh tartars, as well as sharable wagyu beef dishes and, of course, caviar to go along with wines, Champagne, and Russian vodkas. Hergatt showcases his personal caviar brand, Caspy Caviar, as well as Baerii, Kaluga, Golden Russian Osetra, and Sevruga, available for wholesale as well as in dishes. Designer Roman Vnoukov created the look of the intimate space with room for 105. Patterned fabric-covered walls, diamond-guilded doors, and a sleek black bar top give nods to Russia.
