"A Roman-inspired neighborhood trattoria opening as a pop-up on Wednesday, April 28 in the space of Colicchio’s former Craftbar, Vallata is Tom Colicchio’s first-ever Italian restaurant and his first NYC project since 2016; there’s no end date announced and a Crafted Hospitality spokesperson calls it a pop-up of sorts. Colicchio will be in the kitchen for the opening weeks alongside Bryan Hunt, who will lead day-to-day operations, and the current menu features dishes like raw shaved artichoke salad, gnocchi with braised oxtail, and classics such as cacio e pepe.
