"Downtown is about to get a gut-busting late-night dining option: Fat Shack Underground, a subterranean outpost of the growing Fat Shack franchise, is planning to open in Pioneer Square at 88 Yesler Way late this fall or early winter. I learned patrons can expect the chain’s usual indulgent menu—burgers, Buffalo wings, and sandwiches stuffed with mozzarella sticks—and extended late-night hours (11 a.m.–1 a.m. Sunday–Wednesday, 3 a.m. on Thursday, and 4 a.m. on Fridays and Saturdays). The space will lean into its underground theme with historic pictures of Seattle, sports memorabilia and possible local artwork, and will offer beer and cider on tap from Washington and Oregon breweries. Founded in 2010 by a College of New Jersey graduate as a pop-up that expanded to Colorado and Texas, Fat Shack grew into its 15th location after a high-profile appearance on Shark Tank this spring, where Mark Cuban agreed to back the co-founders with a six-figure deal; this will be the chain’s second Washington location (the other is in Bellingham)." - Gabe Guarente
