"Returning to Portland, Bibiano has opened Smart Donkey, a Foster-Powell food cart and bar at 3420 SE 50th Avenue that sticks to burritos: tortillas piled with green adobo–marinated chicken thighs, picadillo, and Guerrero-style beef barbacoa (served with smoky chile negro and guajillo), alongside Micheladas on the adjoining patio. He converted a former car wash into a single-cart pod and beer garden where a small bar pours margaritas, beers from places like Breakside and Fort George, and root beer on draft while the cart focuses on a menu of 10 burritos—classics like rice and beans, carne asada, and carnitas—plus chorizo con papas (with chicharron and jalapeño) and vegetarian options such as braised cabbage and kale or a seasonal vegetable burrito with avocado–pepitas salsa. Most burritos come with rice, beans, and cheese and offer add-ons like guac and sour cream, and he plans a burrito brunch in mid-February or March with five breakfast burritos, mimosas, and bloody marys; Bibiano also explained that choosing burritos and an outdoor beer garden felt safer amid the omicron surge." - Brooke Jackson-Glidden
