"After a four-month closure for a complete renovation (during which it temporarily served out of a Pearl Street location), Rio Grande in Boulder has re-emerged with updated furniture, a fresh coat of paint, new carpet and flooring, cozier seating, and a “living wall.” The revamped space centers on a new bar serving its 11 varieties of margaritas and a new lineup of tequilas, with the tequila roster displayed on a wall of shelves. An open kitchen lets diners watch flame-grilled fajitas and handmade tortillas prepared from locally sourced ingredients. New menu items include upgraded tacos with seasonal monthly specials and mix-and-match a la carte options—beer-braised carnitas, tequila shrimp, or grilled steak—priced at one for $4, three for $11, or six for $20." - Susan Stapleton
