"Set to open in mid-September in Costa Mesa in the same strip mall as Sidecar Doughnuts’ flagship, University Heights’ Pop Pie Co., founded in 2016 by co-owners Steven Torres and executive chef Gan Suebsarakham on Park Boulevard, brings its hand-picked expansion to Orange County. The all-day eatery will be open 8 a.m. to 9 p.m. Sunday–Thursday and 8 a.m. to 10 p.m. Friday–Saturday, offering signature savory individual-sized pies such as Chicken Pot Pie, Aussie Meat Pie, Steak & Ale, curried vegetables, and chile-spiced braised pork, with sides like creamed corn and kale slaw. Dessert pies — including Salted Caramel Apple Crumble, Coconut Cream Pie, and Key Lime Pie — will be available by the slice, as whole 9-inch pies, or in handheld form sweetened with guava cream cheese or lemon curd and mixed berries; small-batch ice cream from companion scoop shop Stella Jean’s and a full-service coffee bar fueled by beans from Portland’s Heart Coffee Roasters will also be offered.
