"Opening Saturday, February 17 at 306 Main Street in Downtown Houston, this new bar from owner Levi Tatum aims to spark a rum renaissance in the city with a focused ten-cocktail menu of elevated takes on classics like the Mai Tai and Hurricane. Rather than relying on sugary pre-made syrups, cocktails are spiced with unconventional ingredients such as activated charcoal, black pepper tincture, and habanero bitters. Behind the bar are more than 50 rums priced from about $8 to over $20 per shot, with the list expected to grow. Tatum — formerly general manager of Bovine & Barley — says the opening was delayed by Hurricane Harvey’s impact on subcontractors; the venue will initially serve cocktails only while a serious kitchen and full food menu are developed over the next six months pending city approvals.
