"Launched in July of last year as a self-styled 'guilt-free' fast-food fried-chicken concept by chef-restaurateur Carl Clarke and partner David Wolanski, this spot aimed to be an independent, healthier alternative to nearby chains like KFC, McDonald’s and Itsu. It attracted a loyal following but had to close temporarily just a fortnight after opening because of unexpected demand; the founders describe the initial run as a 'loud, noisy experiment' in which many things worked and some didn’t. After the recent departure of the former CEO Darren Gardner and other management changes, the duo say they now have the freedom to relaunch the restaurant in a form that better reflects their original vision: bolder in attitude, focused on top-quality ingredients, flavours and people, and presented in a quicker, more accessible format derived from their sit-down concept to suit customers short on time or budget." - Adam Coghlan
