"It might come as a shock to find sushi this fresh in the snow-capped Canadian Rockies. But sure enough, Hello Sunshine’s scallops are raced in from Hokkaido, the yellowtail from Kyushu, and daily specials are decided on by what’s fresh at the Tokyo fish markets. The menu is padded out by apps that nod to Japanese drinking food (crispy-battered karaage, potato salad, and yakitori skewers) alongside bowls of ramen for those looking to warm up from the cold. All are served in a dining room designed to look like a Japanese mountain cabin, complete with fireplaces in the center of each table, wood furniture, and hanging paper lanterns. When dinner is done, finish the night in one of the restaurant’s private karaoke rooms." - Kate Dingwall
