Instead, they’re here for mi quang, the central Vietnamese noodle dish made with turmeric and served with peanuts and rice crackers. The spicy bun bo hue combines a thicker spaghetti-like noodle that sops up the chile-infused broth. Ngu Binh also serves banh beo dia with minced shrimp and crispy pork rinds, a popular street food from Huế that is easily shareable. (Expect the steamed tapioca rice cakes to be slightly chewy.)
