"Tucked alongside the Universal Auto repair shop a few blocks from Rancho Gordo, the truck run by two brothers from Autlán specializes in a Jalisco-style torta ahogada: a meat-filled sandwich doused in a savory tomato-and-chile sauce that’s blended until fine, almost gazpacho-like. The brothers explained their local adaptation—adding tomatoes and veggies along with the meat before drenching the toasted bread—so the sauce soaks in without making the sandwich soupy; the texture is likened to chilaquiles (the sauce softens the crunch but doesn’t erase it).
