"I'm seeing a value-focused deli coming to the increasingly high-priced LoHi dining scene: Dimestore Delibar, which Chef Tim Dotson—known for most recently creating dishes expertly paired with the drinks at the Family Jones Spirit House distillery and restaurant—and Chris Fuentes (formerly of Tacos Tequila Whiskey) are opening in October in the Boulder Street space that previously housed Low Country Kitchen. The concept will operate as a deli by day (open 11 a.m. to midnight overall) offering $10–$12 sandwiches made with house-smoked meat and fish and selling convenience-store grocery items, then transform into a bar and restaurant at night with creative small plates for $12 and under, beers on tap, and $9–$10 cocktails; the space will feature both rooftop and ground-level patios." - Paul Albani-Burgio
