"Operating out of a pop-up at Natachee’s Supper ‘n’ Punch (3622 Main Street) in Midtown, I found Peace Maker Po’boys to be a project with an impressive Houston pedigree from Benjy Mason (Down House, Johnny’s Gold Brick), Chris Roy (Bernadine’s) and Graham Laborde (Hunky Dory); the New Orleans–style sandwiches include a birria debris po’boy with crispy braised beef, a smoked turkey po’boy made with meat from Feges BBQ, and classics like fried shrimp and oyster po’boys, and the restaurant’s name references an oyster-heavy ancestor to the po’boy said to have been brought home by husbands to placate angry wives." - Brittanie Shey
