"Taking over the former Hasty Tasty space on the corner of Lyndale Avenue and West Lake Street, Alejandro Castillon is opening Prieto this summer and will use a massive in‑building smoker to smoke whole animals over wood fire, producing succulent tortilla stuffers that utilize every part of the beasts. Prieto (Castillon’s mother’s last name) will show a bit of Sonoran influence in its dinner dishes, and both flour and corn tortillas will be made on site by a couple from Puebla who live in an apartment above the restaurant. I expect the restaurant to be open for lunch, dinner, late nights and weekend brunch; the interior is getting light renovations (mostly painting and removal of awkward taxidermy), behind the bar will be Spanish tile and 24 beer taps, a full bar with a high‑profile bartender will likely handle cocktails, a back room will receive a honky‑tonk–taqueria makeover, and a rollback door will open to bring the outside in for 25 patio seats.
