"Opening this weekend, I see Cottonwood Station’s “eatery” aims to draw eco-tourists, day-tripping locals and provide a much-needed dining hub for its Blue Diamond neighbors. Created by Blue Diamond residents Steven Enger and Jody Lyman, the 1,980-square-foot restaurant with bar also features a 1,055-square-foot outdoor patio and is pitched as a gathering place for “a pint and pizza.” Already a popular destination for bicyclists and hikers, the interior’s rustic design includes a history wall documenting the origins of the small town. Located about 18 miles from the Strip, the menu includes coffee, teas and artisan pizzas, paninis, salads, espresso, wine, beer and cider. Launching Saturday, April 14, future hours will be 6 a.m. to 8 p.m. daily and until 10 p.m. on Friday and Saturday." - Bradley Martin
