"Opened in Adair Park by Taylor Sublett in December, the club started with 35 memberships and is capping at 50 to 75, offering cellar space of up to a thousand bottles for collecting members. Sublett says he was inspired after joining the Roots and Water wine club in Dallas and that, "I thought this would be a good fit for a city like this, with all the people moving here." Located a door connection away from the Japanese restaurant by chef Leonard Yu, Sublett charges retail prices for the wine because he was "tired of going to restaurants and paying 300 to 400 percent markup." The space is dotted with wine all over the walls, including vintage first-growth Bordeaux, Napa cult wines like the Third Twin, a Venetian magnum of Venissa, and an 1863 port. The club hosts winemaker tastings with members and has a kitchen for a dining residency currently occupied by the team behind the pop-up Bovino After Dark, called Seventh House; Trevor Shankman’s "Maria" may be the next series of dining events in the space. On membership vetting Sublett explains, "We normally start with a phone call. Then I like to have them come in for tastings to see if we’re a good fit for them and they’re a good fit for us. They get to interact with our other members and see how they do." Neither Ries nor Sublett revealed the exact price of joining their clubs; prices range between $5,000 to $8,000 annually, with about $2,500 in initiation fees." - Henna Bakshi
