"A New Mexico–based paleta concept has opened its first Nevada location in Chinatown’s Shanghai Plaza. The Paleta Bar occupies a 1,091-square-foot counter-service dessert shop at 4258 Spring Mountain Road, Suite A 101 and is open daily from 11 a.m. to 10 p.m. Operating more than two dozen locations across California, New Mexico, Florida, and Texas, the shop serves customizable ice pops inspired by the Spanish paleta: customers choose from a roster of about a dozen flavors (including avocado, Oreo, mango, banana, coconut, and coffee), then dip them in chocolate or powdered chile and chamoy and add toppings such as nuts and candy. Popular combinations include the Lorenzo Antonio (a taro paleta with dark chocolate and almonds) and the Rainbow (bubble gum paleta with white chocolate and sprinkles). The counter also offers fruit cups, aguas frescas, elote, and “Dorinachos” made with Doritos, cheese, elote, and jerky, and sits a short distance from Pepper Lunch, Kura Revolving Sushi Bar, and 85C Bakery Cafe." - Bradley Martin
