"Twenty-one years after opening his rustic French restaurant Bouchon on Lexington Avenue in downtown Asheville, chef/owner Michel Baudouin decided it was time to flip the script on the bistro beloved for its moules, frites, and gratinée l’oignon. Pulling a page from the past when crepes were an option in the restaurant’s courtyard, Baudouin decided a sequel was in order. Bouchon ended the full menu service at the beginning of January. In mid-January, Creperie Bouchon began pouring the batter for sweet and savory crepes for lunch and dinner, as well as sandwiches (croque monsieur of course), chien chaud (a French hot dog), salads, and those cones of addictive frites.
