"I note that Washington, D.C.-based Mediterranean fast-casual spot Cava has opened its first Nashville location in The Mall at Green Hills (2171 Green Hills Village Drive) — a 2,475-square-foot restaurant designed to meet neighborhood needs with 52 dine-in seats, additional outdoor patio seating, and a designated pickup zone for online and app orders. The menu emphasizes healthy, affordable, customizable salads, grain bowls, and juices, and includes feta and spicy lamb meatballs, warm pita with an assortment of dips and spreads, plus seasonal offerings like pearl couscous roasted tomato soup with harissa; house-made drinks include beet lemonade and blueberry jasmine alongside unsweetened black and jasmine teas. Co-founded by Ted Xenohristos, Ike Grigoropoulos, and Executive Chef Dimitri Moshovitis—three first-generation Greek Americans—the trio aims to bring flavors from their upbringing to a wider audience in a modern, accessible format. A second Nashville outpost is planned at the Firth + Broadway development later in the year, and for the opening Cava is partnering with The Nashville Food Project, donating a portion of opening-day sales and accepting guest donations. The Green Hills location will be open daily from 10:45 a.m. to 10 p.m." - Delia Jo Ramsey
