"At Michelle Nazzal’s pop-up Mishmish, eating vegan Palestinian dishes feels like stepping into family history: the kifta—plant-based meat seasoned with allspice, cilantro, mint, and onion and wrapped around a tiny stick—is drizzled with a tahini sauce that sings; thin slices of beet, layered like a fanned deck of cards, balance just the right amount of oil and crunch and come adorned with bright orange flowers; and the cashew labna is a zingy, textural surprise. Nazzal frames these vegan takes on her grandmother’s recipes as a way of preserving Palestinian culture and imagines growing the project into a shop where she could sell pints of cashew labna and host art shows." - Paolo Bicchieri
