"Opened last year in Thai Town, this shop centers coconut as a signature element—“Coconut is one of the most important ingredients in Thai desserts,” says Kontee Sridaranop, one of the operational managers. Nidarat Thaiprasongsak adds: “It’s a flavor that’s easy to eat. It’snot too sweet, it’s nuanced, and it pairs well with the toppings we offer.” The operation leans into Thai traditions of fruity, seedy, and crunchy textures by offering three toppings with each scoop; options include toddy palm seeds in syrup, cubes of grass jelly, sweetened egg floss called foi thong, shredded jackfruit, coconut, roasted peanuts, and sticky rice, and you can also get scoops tucked into a white bread bun (the Thai version of an ice cream sandwich). Although coconut is emphasized, the team is proud of fruit-based offerings made with whole real fruit—passion fruit, roselle, custard apple—and riffs on coconut such as coconut taro and durian-and-coconut.
