The Noodle Man opens in Chinatown | Eater Vegas

"An expanded Chinatown outpost of a popular hand-pulled noodle shop that has been a must-visit in the southwest since 2015, this 2,434-square-foot location overseen by chef Chao Li is significantly larger than the compact original at 6870 S. Rainbow Blvd. It maintains an open kitchen where diners can watch noodles being hand-pulled and features Central China–inspired artwork similar to the original. The menu highlights include spicy beef shank and braised pork with egg appetizers, an array of noodle soups and knife-shaved noodle dishes served over rice (mapo tofu, beef brisket and tomato, Lanzhou beef, and hot pepper chicken among them), plus savory pancakes with Mongolian beef or green onion and a house take on a beef burrito. Open daily from 11 a.m. to 9:30 p.m., the restaurant is planning to franchise nationally with announced plans for additional Las Vegas-area outlets, including a future Spring Valley location at 5060 South Fort Apache, and is awaiting a neighboring beverage store, Tbaarto, to debut." - Bradley Martin
