"I visited the all-outdoor dining destination dubbed Water Park, which opens this summer with 11 newly signed restaurants and bars and an emphasis on short-term kiosks as incubators. Nine of the eateries sit in 300-square-foot kiosks lining Crystal Drive, many of which are run by operators who got their start at farmers markets or as food trucks; JBG outfits each stall with the kitchen equipment needed to open and offers 1- to 3-year lease terms to lower the barrier to entry. Two in-house concepts operated by STHRN Hospitality are longer-term tenants, and customers can carry alcohol around National Landing thanks to the area's approved “sip and stroll” designation.
