"I noticed Hayato is finally open at the ROW development in Downtown LA; the upscale Japanese kaiseki restaurant has slowly been realizing its final form, initially opening quietly as a daytime bento-box takeaway and now offering the full dinner experience, which looks pretty glorious. Chef Brandon Go has yet to post publicly about his extended dinner experience, but a slew of photos on Food Talk Central show a truly upscale, seafood-, service-, and sake-focused single-seating omakase that runs more than a few hours, with Go serving customers directly from the bar. Resy lists the nightly omakase at $200 per person with a 16% service charge (no further tipping expected), reservations up to four weeks in advance, a $100 prepaid deposit per diner, and a 72-hour cancellation policy because seafood is special-ordered for each guest.
