"Phoenix has no shortage of taquerías tucked away in unassuming strip malls, but Tacos Veganos is here to fill the vegan taqueria niche. Owner and founder Jose Bojorquez started selling vegan tamales out of his trunk and slowly expanded his vegan fare until it eventually landed him this brick-and-mortar location. The result is a colorful and true-to-form taqueria, complete with an all-vegan menu. Try out any staple taqueria dishes with a reinterpreted soy base like asada, al pastor, and pollo, or opt for the Instagram-favorite-but-actually-tasty-dish, quesabirria tacos with birria ramen, made with a jackfruit base." - Mcconnell Quinn, Jamie Killin
