"Opened in early 2023 in Union Square, Hed Very Thai is Wannajaro’s Union Square outpost that quickly gained a following and directly influenced Hed 11’s approach: she found swapping coconut milk for animal dairy was easy and that most dishes were already gluten-free, a lesson that led to roughly 90 percent of Hed 11’s debut menu being gluten- and dairy-free.
