"I recently visited Fin de California, a new Tijuana restaurant that, hot off its opening week, serves dishes and drinks inspired by the region’s two Californias in a concept they call “Caliterranean,” fusing Baja and California culinary traditions and high-quality ingredients with classical techniques. The menu ranges from Baja-specialty seafood to American-style steakhouse entrees, vegetarian options, and house takes on bao buns and tacos. The Prohibition-era–inspired cocktail list offers classic drinks with modern twists and relies on private-batch spirits — including vermouth, bitters, and other components distilled exclusively for Fin de California — while the wine list leans toward Napa Valley vintages and the developing craft-beer program includes Ensenada brewers Cerveceria Wendlandt and Agua Mala.
