"The retro-futuristic ambiance of the Four Seasons’ new sushi bar harkens back to the 1930s, when the luxury steamship Lurline sailed between the Hawaiian Islands. Sleek curves, amber lighting, and an enormous fountain set the stage for immaculately prepared sushi. Chef Kiyo Ikeda stands at the helm here, delicately spooning caviar atop Hokkaido scallops and bluefin toro, or grating fresh wasabi root for his reverent audience at the bar. The drink menu includes a shiso-scented margarita and junmai daiginjo exclusive to the resort. The desserts are edible elegance; open up the Jewel Box to reveal a miniature matcha raspberry roulade, strawberry sake cheesecake, yuzu tart, and chocolate torte.
