"A modern Japanese American destination called Soraya opened its doors in the Federal Reserve Building downtown that used to house Maru Sushi. Harold Kim, owner of the short-lived Korean American spot Black Ginger in Corktown, helms the restaurant. Expect starters like tempura broccolini or takoyaki — octopus with pickled ginger, scallion, and dashi broth; an offering of noodles like udon with thinly sliced rib-eye; entrees like citrus-brined pork katsu with yuzu wasabi aioli; and a variety of sushi rolls.
