"Opening Thursday, December 5 at Pentagon Row (1201 S Joyce Street), Bun’d Up will bring its Taiwanese gua bao filled with Korean flavors across the Potomac, offering gua bao with miso-braised pork belly and pineapple kimchi, barbecued beef with gochujang, or sautéed mushrooms and fried shallots. Chef-owner Scott Chung plans to operate Thursday through Sunday from 11 a.m. to 10 p.m., has secured a 1.5-year lease, and will use the full kitchen to expand the menu into Korean street foods like spicy rice cakes (tteokbokki), kimchi pancakes, various soups and stews, and possibly Korean tacos; a fryer will allow him to add Korean chicken and shrimp for buns and bowls. The shop will serve customers two ways—grab-and-go buns up front or a numbered system for more work-intensive dishes with food runners—and, while Chung doesn’t expect a full liquor license immediately, beer and wine service could be added later." - Gabe Hiatt
