"The Plot opened its first OC location at the Camp in Costa Mesa in January, expanding from two outlets in the San Diego area. The restaurant focuses on regenerative farming and no waste. Co-owners chef Davin and Jessica Waite transform beet scraps into ketchup, and leftover peels from the banana creme brulee into tacos and tortas.
