Staples include chilled tofu in sesame bang bang sauce, cumin lamb buns, and bone-marrow fried rice; seasonal dishes might be things like beef ribs in a Palisade peach–hoisin glaze or charred cabbage with whipped peppercorn tofu, umeboshi, and lap cheong.
