"Run by Ryan and Kelleanne Jones (of Kiki & Rye and Community Table), this forthcoming Cannonborough/Elliotborough restaurant centers on a true live-fire kitchen: a wood-fired hearth and a Grillworks grill inspired by Argentine cooking, with oak as the only fuel and no propane or conventional stove, requiring precise temperature control throughout service. The American-influenced menu highlights high-end proteins such as dry-aged steaks and black sea bass alongside fine-dining touches like foie gras and sweetbreads, while shareable sides — for example coal-roasted potatoes and cauliflower with furikake — are designed for the table. Housed at 72 Cannon Street in a two-story historic house rebuilt after a 2011 arson, the dining rooms feature an iron staircase, green Moroccan tile, white marble tables, brushed-brass accents, and an original roof lining used as an accent wall on the second floor, with many furnishings scouted locally by Kelleanne. The team previously operated the Mill at 2t near Hartford, which received a favorable New York Times review, and plans to open soon with dinner service nightly from 4 p.m. to 10 p.m." - Erin Perkins
