Chef Rafael Gonzalez, who was born in Spain and raised in Venezuela, and his wife, Kate, travel to New Mexico yearly to source up to 1,500 pounds of Hatch green chiles for the menu at their daytime cafe. The green chile margarita is delightfully spicy-sweet, and the borrachos, a New Mexican dish of corn tortillas filled with eggs and house-made chorizo, is smothered in green or red chile.
