"Reopening at the former Laja space, Restaurant Diego Hernández is being brought back by chef Diego Hernández with plans to open a first phase in June after he officially picked up the keys; with partners that include rancher Orlando Platt, it will offer a la carte options, bar bites, and a “Corazón de Tierra-style” tasting menu, and Hernández hopes to complete the build-out by January to include a 60-seat dining room and terrace, 40 bar seats for walk-ins, and a 15-seat chef’s counter. Hernández says he will continue researching the cuisine of the region and revive the farm-to-table spirit that made the Valle famous by buying whole animals, offering lesser-known cuts to reduce food waste, and emphasizing sustainability amid the area's rapid growth." - Bill Esparza
