For the last 20 years, winemaker Cipriano Barsanti has garnered a quiet following in the natural wine world, but refuses to scale up the Macea vineyard to meet demand. The rugged plot on a slight elevation sees big temperature fluctuations, which guarantee wines with crisp, fresh acidity similar to bottles from Burgundy.
