"I visited the new Xi’an Noodles in downtown Seattle’s Westlake Center, on the mall’s revamped food-court second floor, and found it stays true to the popular University District original: it’s known for wide, chewy hand-pulled biang biang noodles—named for the sound of the dough slapping the counter—served in generous portions at modest prices. The new location offers the restaurant’s hand-ripped noodles with toppings like spicy cumin lamb, spicy tingly beef, stewed pork, and vegetables, and its all-around well-done food has earned it a spot on Eater Seattle’s list of the city’s best Chinese restaurants.
