Portland’s Kachka Is Opening a Cocktail Bar at the Former Aimsir Distilling Space | Eater Portland
"The former Aimsir Distilling tasting-room bar space at 2117 NE Oregon Street — described as a 1,500-square-foot, glittering room — has been offered (including all of its equipment) to the expanding restaurant team and is the site of the to-be-named cocktail project with a hopeful early-summer opening. The tasting room closed earlier in 2025 following financial issues at its parent company, and the previously hoped-for vegan dim sum collab with Jade Rabbit has been scrapped (Jade Rabbit has since found a new home on Belmont Street). One of Aimsir’s owners reached out to offer this second space, calling the opportunity “such a great opportunity to take on.”" - Paolo Bicchieri
