"Tucked inside the Hyatt Centric Las Olas Fort Lauderdale, I visited a hotel-room speakeasy called 901, a pandemic pivot with a bartender-in-residence program that invites bars from around the U.S. that are currently closed or struggling to pop up in the space. The intimate bar channels serious 1920s Prohibition vibes — bookshelves lined with vintage titles, a record player, velvet furniture, antique artifacts, and artwork — and only seats up to six guests at a time, bookable by reservation only; upon arrival guests are given a password to get a key, then asked to look for the red light next to an unmarked door at the end of the hotel's 9th-floor hallway and knock twice to enter. The menu at 901 features cocktails and cuisine created just for the space by executive chef Greg McGowan, including lobster rolls, bone marrow, and duck fat fried potatoes with truffle crème fraiche, and the space hosts rotating pop-ups from local and national bartenders (currently Gio Gutierrez hosting a Cuban rum room March 30 to April 1; Austin’s Midnight Cowboy from April 12-8; Nashville and Atlanta’s Red Phone Booth from May 9-17; and Adults Only from LA from June 8-13).
